Mezcal Artesanal is the regulated category for mezcal produced by traditional methods: agave roasted in earth or stone pits, milled by hand or by tahona, fermented in open wood or stone vats, and distilled in clay or copper stills. It is one of three categories under the Denominación de Origen Mezcal, alongside Mezcal and Mezcal Ancestral. Dos Caballos is certified Mezcal Artesanal.
Espadín (Agave angustifolia Haw.) is the most widely cultivated agave for mezcal. Dos Caballos uses 100% Espadín from Oaxaca, México — the heartland of mezcal production.
An allocation model means each bottle is reserved for a specific buyer rather than sold from inventory. We do not sell from a shelf or a checkout cart. Each release of Dos Caballos is a limited, hand-numbered batch, distributed through selected maisons and direct private allocation. Customers request an allocation; we confirm personally within forty-eight hours.
Tequila is mezcal made exclusively from blue Weber agave in five specific regions of México — primarily Jalisco. All tequila is technically mezcal; not all mezcal is tequila.
